EGG MIX (baking mix)
Our Baking Mix is used for baking pastries. Owing to the up-to-date production process it is a wonderful substitute for natural eggs, powdered eggs and liquid eggs.

USE:

The mix is used in retail and industrial production for making pastries of the following kinds: short, hard, semi-puff, short pastry bases/coverings (cheesecakes, apple pies), all sorts of leavened pastries (e.g. sweet buns, yeast cakes), wafers. In addition it is also used for making convenience food products such as dumplings (pyzy, kluski), pierogi (dough pockets with filling), pancakes and deep-frozen dough products.

1 kg of the baking mix substitutes for approx. 90-100 eggs.

The mix is not recommended for making sponge cakes, and for spreading and beating.

DIRECTIONS FOR USE:

The baking mix should be used just like natural eggs in the production process: 1 portion of the mix for 3 portions of lukewarm water.


Baking Mix - example recipes
Yeast cake - size 10 kg

Ingredients:

  • 300 g of baking mix
  • 2500 g of water
  • 5500 g of wheat flower
  • 240 g of confectionery milk mix
  • 800 g of margarine
  • 800 g of sugar
  • 250 g of yeast
  • 70 g of vanilla sugar (or vanilla essence and sugar)

total 10460 g
loss 460 g
output 10000 g

Preparation::
leaven: dissolve confectionery milk in 1600 g of water, heat to 40°C, add yeast, 100 g of sugar and 1000 g of flour, mix and leave for rising
egg liquid: dissolve baking mix in 900 g of water, add sugar and salt, mix everything
dough: pour egg liquid into the risen leaven, add flour and mix carefully, melt margarine and add to dough, mix everything again and leave for rising.


Apple pie on shortcake: size 10 kg

Ingredients:

  • 36 g of baking mix
  • 1470 g of wheat flour
  • 108 g of water
  • 930 g of margarine
  • 480 g of icing sugar
  • 20 g of baking powder
  • 6000 g of roast apples
  • 1500 g of "Ambrozja" pudding cream

total 10544 g
loss 544 g
output 10000 g

Preparation:
egg liquid: dissolve baking mix in water and mix carefully
dough: knead margarine with icing sugar, add egg liquid and flour with baking powder and mix
apple filling: mix pudding cream with apples
Put apple filling on the baked shortcake base and sprinkle with shortcrust pastry.

IMPORTANT!!! At your request our production specialist will adjust the amount of the baking mix to suit your particular recipes and production processes.
